Beer

Each week we brew small batches of hand-crafted ales in our 10 barrel (310 gallon) brewery.

Made with Organic Ingredients

We use 100% organic barley for the base malt in all our house beers. Expect the same great flavor with an added dose of good karma now that your favorite Elliott Bay beer does the earth some good too!

Year-Round Beers

Alembic Pale Ale: Our copper-colored Pale Ale, hopped exclusively with Cascades, won a Gold medal at the 2000 Great American Beer Festival. A favorite of our mug club regulars, the Pale consistently remains our #1 selling beer.

Highline IPA: A bold and hoppy golden ale, the house IPA recipe employs the technique of "first wort hopping" to infuse this NW classic with all manner of hop goodness.

Hop von Boorian: An unfiltered hoppy pale ale fermented with Belgian yeast strain.

Luna Weizen: Eminently drinkable, our American-style wheat beer, weighing in at 4.25%, uses 100% imported organic German malt to achieve the intriguing flavor and aroma of citrus. Also used as the base for our Orange Infusion, a Gold medal winner at the 2001 GABF.

No Doubt Stout: The darkest of our year-round house beers, this robust beer, brewed with flaked oats, has an delicate smooth texture and rich aroma of roasted malt. A perennial favorite here at The Pub.

Pilot Light: A NEW recipe for 2006. This beer is the answer to the perennial question "What's the lightest beer you have on tap?" Straw-colored and mildly hopped, it will be "all that" come summertime when it finally warms up arouond these parts. But you can enjoy it now.

Current Seasonal Beer(s)

B-town Brown: The name for this beer was a slam dunk, so we just had to brew it. Mildly hopped and mahogany in color, the Brown is sure to please those who enjoy a good session ale. This recipe could be destined to become a new house favorite. 5.0% ABV

Demolition Ale: This recipe scored a bronze medal at the 2003 GABF in the American Strong Pale Ale category. It screams out "HOPS" from the first whiff to the last lingering drop. 7.5% ABV

Fuerte von Boorian: The third in our line of Belgian-inspired ales, Fuerte is a strong ale based on a barley wine recipe that was fermented with the house Belgian yeast. 9.25% ABV

Noir von Boorian: A Belgian Black Beer? Yep, and it's tasty too. Based on the German Schwartz bier style, Noir's blend of dark malted barley yields a complex beer that is rich in both body and flavor with the added twist of being fermented with Belgian yeast. 5.25% ABV

Saison von Boorian: A farmhouse-style Belgian ale, the Saison is light in color and body but boasts an intriguing spicy aroma and finish from the judicious use of cardamom in the boil. 5.0% ABV

Other Beer Specialties

Blended Beers: Elliott Bay patrons have the unique opportunity to choose from a half-dozen diffent blended draught beers, including cider blended with lambic.

WA-only Guest Draught: When we opened in 1997, we were committed to featuring the masterful creations of our fellow Washington brewers. Seven years later, we remain true to the vision of complementing our in-house line up with some of the best darned hand-crafted beers on the planet. We roll through guest kegs every few days, so you can stop in often and always have the freshest selection.

A few of the local breweries we've featured recently include Harmon, Walking Man, Iron Horse, Big Time, Elysian, Boundary Bay, Skagit River, Scuttlebutt, and Maritime Pacific.

Two Cask Beers, All the Time: We feature fresh, locally-produced cask-conditioned beers poured via a traditional beer engine AND a delightful nitrogen pour, in all its cascading glory. Flavors change frequently.

Cider and Lambic: Our draught selection includes permanent handles of cider and Lindeman's Framboise Lambic.

In the Bottle: Imported and premier domestics round out the malted beverage line-up at Elliott Bay. Choose from Pilsner Urquell, La Fin du Monde, Newcastle Brown, New Belgium Abbey, Kaliber, Amstel Light, and a rotating selection of locally bottled beers.
